Fat Gold Standard

This is our Fat Gold Standard from the 2022 harvest. With this oil, we aim for a flavor profile that’s bold and peppery.

The fruit for this year’s Standard came from one of our favorite groves in California. Panacea Farms is mostly frantoio, though there are leccino trees scattered throughout as pollinators. It’s the only grove we work with where the olives are harvested by hand, and it’s also recently been certified organic.

The olives were milled by Patrick Martin at Frantoio Grove, which holds a special place in Fat Gold’s history: it’s where we milled our very first batch of olive oil, years ago!
